Salt is found in almost everything you eat, but have you ever wondered how it’s made? Long ago, Taiwanese used to boil seawater until only the salt remained. Another method for making salt was to use salt pans. These were shallow fields filled with seawater. The water in the fields would gradually evaporate, leaving salt behind. Taiwanese used salt pans to produce salt for hundreds of years. But in 2002, Taiwan’s last salt pan, called Cigu Salt Field, closed down.

幾乎所有食物裡都含有鹽分，但你是否想過鹽是如何製成的？很久以前，臺灣人曾一度用熬煮海水的方式，直到最後只剩下鹽分。製鹽的另一種方法則是利用鹽田。鹽田是裝滿海水、水深甚淺的一塊田地。田地裡的海水會逐漸蒸發而留下鹽分。臺灣人用鹽田來產鹽已有數百年歷史。但到了 2002年，臺灣的最後一塊鹽田──七股鹽田──仍黯然落幕。
